Mango Fool layered with blueberries and mint whip cream |
Ingredients:
Two ripe mangos (peeled, cut into chunks)
3 Table Spoons of Coconut milk
Two Splenda Packets
Table Spoon Lime juice
Fresh or frozen blueberries
whip cream
Directions:
In a food processor, blender or magic bullet combine all ingredients, and blend well.
Prepare whip cream according to directions (whip milk and power) except instead of using vanilla add mint extract.
Start layering with blueberries, fill the entire bottom of desired glass (I like wine glasses or martini glasses) with blueberries. Using a spatula or wooden spoon add mango mixture and top with a thin layer of whip cream, and repeat until you reach the top. I like to add a little dollop of whip cream and sprinkle with more blue berries. For fun you could add a little umbrella.
