Heart Healthy Chocolate Chips Cookies

March 14, 2012

Recently I started a new job and due to vacation timing I had a week to learn all the ins and outs of a woman's brain that has worked at the hospital for over 30 years. I took ten pages of notes, and I then I was off to conquer what felt like the impossible. It was a bumpy start, but I am about half way through my first week on my own and I'm not running away screaming yet. I am happy to report that there are some really amazing people who work at the hospital; and they have been so patient and understanding while answering my copious amounts of questions. As a thank you I felt it would be apropos to bake some heart healthy chocolate chip cookies.

Ingredients:
1 cup organic unsweetened apple sauce
½ cup of brown sugar
½ cup of white sugar
2 eggs or 4 egg whites
1 tsp pure vanilla
1tsp baking soda
21/4 cups of whole wheat flour
1 tsp salt
1 cup of semi-sweet chocolate chips

Combine all ingredients and bake on 350 degree 8-10 minutes

When you work in a highly stressful environment that is focused on providing the highest level of patient care having a supportive staff and a positive work environment really does make a huge difference. Making a simple batch of cookies was the least I could do.

sincerely
