Saturday Brunch
So it's Saturday morning and hopefully you are lucky enough to have slept in, even just a little. You might find yourself with a bit of extra time to prepare breakfast this morning, and thus seeking a build your own adventure breakfast recipe. One of you kindly suggested that I add some breakfast recipes, so here's a Saturday brunch suggestion that I whipped up just for you.
Ingredients:- Two eggs
- 1 tbs of water
- Margarine (for cooking)
- Mushrooms
- Onions
- Tomatoes
- Green pepper
- sharp cheddar cheese (grated)
- Whole wheat Tortilla
- Sliced ham or turkey bacon (your choice)
Dice veggies/slice ham into squares (set aside)
Grated cheese set aside
Crack two eggs into a bowl, whisk
Add veggies /sliced ham (mix together)
Add 1 tbs water (helps with fluffiness)
Melt margarine in a heated frying pan
Add egg veg mixture
Cook egg until it's slightly set on top
Flip and cook on the other side (resembles an opened omlette)
Set aside
Clean frying pan and heat
Place tortilla in pan cook approximately one minute
Flip and add cheese to the top
Add egg (omlette)
Fold in half and continue to cook until cheese is melted.
Cut into sections and top with salsa/ or sour cream
serve immediately
Pair with cooked asparagus or spinach.
A wise person once told me that the secret to a great omlette is a tbs of water, as it helps to keep it together. You could also scramble the eggs for this recipe in which case use milk instead of water to promote the scrambled texture.
Play around with different variables, you could do cream cheese instead of cheddar, and could put spinach in with the eggs too. Make it your own by substituting the veggies with your favorites. I'd love to hear about them :)
